Avocado and Egg on Toast
- 2 wholegrain toasts
- Half of a ripe avocado
- 2 eggs (poached, scrambled or fried – your choice!)
- A pinch of Parmesan cheese
Poach, scramble or fry an egg and place on top of mashed avocado spread on toast. Finally, top with a small handful of grated Parmesan cheese.
