Gentle to the body, an avocado Ice cream pop is easy and tasty.
AVOCADO ICE CREAM POP
- 1 New Zealand Avocado
- Coconut milk – 1 cup
- Syrup – 1 cup
- Lime juice – 1 tablespoon
- Lime skin – 1 teaspoon
- Cut & scoop out the avocado flesh and place into the high speed blender along with coconut milk, syrup, lime juice, lime skin. Process until is smooth and thick.
- Divide mixture evenly among 4 ice-pop molds, add the ice cream sticks and add extra coconut milk.
- Place filled molds in the freezer for 6 hours, or until the popsicles are solid ready to serve.
