Gentle to the body, an avocado Ice cream pop is easy and tasty.

AVOCADO ICE CREAM POP

Ingredients:

  • 1 New Zealand Avocado
  • Coconut milk – 1 cup
  • Syrup – 1 cup
  • Lime juice – 1 tablespoon
  • Lime skin – 1 teaspoon

Method

  • Cut & scoop out the avocado flesh and place into the high speed blender along with coconut milk, syrup, lime juice, lime skin. Process until is smooth and thick.
  • Divide mixture evenly among 4 ice-pop molds, add the ice cream sticks and add extra coconut milk.
  • Place filled molds in the freezer for 6 hours, or until the popsicles are solid ready to serve.
