NZ avocado with quinoa salad

NZ avocado with quinoa salad

Serves 2 portions
Ingredients:

  • 1          NZ avocado
  • 50 g      Quinoa
  • 20 g      Shallot, diced
  • 10 g      Red onion, diced
  • 20 g      Japanese cucumber, diced
  • 50 g      Extra virgin olive oil
  • 50 g      White balsamic  vinegar
  • 30 g      Honey
  • Salt and pepper, to taste
  • Chive, chopped
  • Chervil, chopped
  • Cilantro, chopped

Method

  1. Scoop and dice half of an avocado and set a side
  2. Cook the quinoa in salted boiling water for 12-15 minutes then strain and set the cooked quinoa aside until cool
  3. Combine the extra virgin olive oil, white balsamic, honey, salt and pepper then adjust the seasoning
  4. Place everything in the mixing bowl and mix it together
  5. Serve by scooping the quinoa salad on top of the remaining NZ avocado
